Easy Recipe – Fluffy Carrot Cake
Happy Friday folks!!! Today I’ll share a very easy recipe for you to try at home! I love carrot cake! Don’t you? This recipe is so simple that you wont get it wrong!

- 3 Eggs
- 200g of Carrots (or a big one)
- 150ml of Vegetable Oil (Coconut, Sunflower or Soya)
- 260g of Sugar
- 360g of Flour
- 12g of Baking Powder
- 6g of Baking Soda
If you work with ounces and pounds, I found this converter to make your life easier! Sorry.. I do grams and liters! hehe

To begin, pre heat the oven to 180°C (350°F) and hover your mouse over the picture for the rest of the instructions!
It will take approximately 30-40 minutes to bake. The exact time varies from oven to oven, so keep an eye on it!
And our carrot cake is ready!!
This is a great recipe. You can make it simple for a afternoon tea – or a coffee if you prefer haha - or put some topping on it and serve it as a dessert! The kids love it with chocolate topping!
Okay .. not only them hehe! We all do!! You can make a soft brigadeiro, which is a Brazilian sweet; a very soft ganache or even make a butter chocolate cream to spread on top! All of these options are simple to do!
Another great tip is to make cupcakes out of this recipe too. Divide it into the baking cups and it will take approximately 15-20 minutes to bake. Same as the cake, it’s important to keep an eye while baking for them not to burn!
