Recipe – Blueberry and White Chocolate Muffin
We visited a farm last month and I eaten one of the most delicious muffins I’ve ever tried! Serious, I’m not exaggerating. It was really delicious! It’s so true that I had to tell the owner and he GAVE ME THE RECIPE!!
I was so happy that he shared the recipe with me that I needed to come here and share it with you too! You have to do at home and the good thing is that you can use other fruits apart from blueberries. Not to mention that it is very easy and simple!
As the berry season is approaching, I have plans in finding more recipes with them to share with you! People use it a lot here, so as I test them, I’ll share too!
So now, let’s get to the recipe as the blueberries are waiting for us!
- 200g of sugar
- 2 eggs
- 100g melted butter
- 400g of flour
- 2 teaspoons of baking powder
- 2 teaspoons of vanilla sugar or extract
- 200ml of milk
- 200g of fresh or frozen blueberries
- 170g of chopped white chocolate
In the blender, beat the eggs until they foam. Add the sugar and continue to beat. Put the melted butter and beat again. When it is all mixed, add the flour, baking powder and vanilla sugar with the milk. Mix thoroughly to incorporate (can be hand or beater). Finally, place the fresh or frozen fruits and the chopped chocolate by mixing them so that they are distributed throughout the batter.
Divide dough into muffin paper (or cupcakes) and bake in preheated oven of 180C for about 15 minutes. The time can vary from oven to oven, so keep an eye on it so it doesn’t burn! An important information: it’s a very thick dough that you can put it in the muffin papers with a spoon. In each one, I added approximately 60g of dough and it served around 22 muffins.
Now you just have to decorate them! I ‘glued’ the blueberries with the white chocolate and it was very easy!
In addition to it, I made a few strips on top to finish it!
And that’s it!! Now just enjoy it!
It’s a great option for an afternoon snack, to give them as a gift, for children’s school snacks or even for birthday parties! I did it for an afternoon tea with a couple of friends and I don’t have to tell you that everyone loved it, right? hehe
